I have a HDS 5 in the Bow and a HDS5 in my console.  They are connected through the hub by Ethernet cables. When I add the HDS9 to the side of the console I will connect to the same hub with an Ethernet cable in the third open spot.   Do I take the sonar cable off the 5 at the console and plug it into the nine?  I want the center console unit to have maps and GPS only. I want, the 9 to have graphs, sonar, water depth and temperature. I am completely a novice when it comes to these units.  am I thinking correctly, does anyone have any tips or anything I am missing?

Yes if you want the sonar on the 9 instead of the 5 just move that cable.  You may still be able to see it via the Ethernet unless you set your units to local and disable the network icon.
